Director Marie Laure Inchauspe: “Here, we still eat a lot of meat. Our meat has a good reputation, and is of very high quality. Maybe consumption is going down, nationwide, but here in the Basque Country, eating meat is part of our culture.” At the back of the abattoir, a pig walks in quietly, quieter than its counterparts earlier. “Chances are this pig comes from a small farm,” Inchauspe says. “The more they are used to humans during their lives, the quieter we can manage to keep them.”
